【摘要】:Thisstandardspecifiessafetyandhygienerequirementsforthedesignandmanufactureofrotaryrackovenswithoneormorerotaryracks.Theseovensareusedinthefoodindustryandshops(bakeries,pastry-making,etc.)forthebatchbakingoffoodstuffscontainingflour,waterandotheradditives.Thisstandardappliestoovensusedonlyforfoodproductsexceptforthosecontainingvolatileflammableingredients.Thecontrolofthehumidityoftheairinthebakingchamberisbytheproductionandintroductionofsteamaroundnormalatmosphericpressure.Thefollowingmachinesareexcluded:-experimentalandtestingmachinesunderdevelopmentbythemanufacturer;-domesticappliances.Thisstandardcoversthetechnicalsafetyrequirementsfortheinstallation,cleaningandmaintenanceofthesemachinesasdefinedin3.12ofEN292-1:1991andinthemanufacturer'sinstructionhandbook.Thesignificanthazardscoveredbythisstandardaremechanical(shearing,trapping,impact,lossofstability),electrical,thermal,ergonomicandthoseresultingfromlackofhygiene.Theyarespecificallylistedin4.Noiseisnotconsideredtobeasignificanthazardfromrotaryrackovens.Thisdoesnotmeanthatthemanufacturerofthemachineisabsolvedfromreducingnoiseandmakinganoisedeclaration.ThereforeanoisetestcodeisproposedinAnnexB.Thehazardsfromtheuseofgaseousfuelbygasappliancesarenotcoveredbythisstandard.Thisstandardappliesonlytomachinesmanufacturedafterthedateofissueofthestandard.
